BBQ pork ribs

A home oven handles this; it only needs low heat and time. The sauce goes on in the last fifteen minutes, or the sugar burns.
Ingredients
- 1200 g Rack of pork ribs
- 40 g Brown sugar
- 15 g Paprika
- 10 g Garlic powder
- 10 g Onion powder
- 12 g Salt
- 5 g Black pepper
- 150 g Tomato ketchup
- 30 ml Cider vinegar
- 40 g Honey
- 20 ml Soy sauce
Method
- Peel the thin membrane off the back of the rack. Left on, it blocks the seasoning.
- Mix the brown sugar, paprika, garlic powder, onion powder, salt and pepper, and rub it over both sides.
- Wrap the ribs in foil and chill at least thirty minutes, or overnight if there is time.
- Bake at 150C for two hours, still wrapped.
- While it cooks, simmer the ketchup, vinegar, honey and soy sauce for ten minutes until thickened.
- Open the foil and brush the sauce over the ribs in an even coat.
- Raise the oven to 200C and cook fifteen minutes more, until the glaze sets and shines.
- Rest the rack ten minutes before cutting between the bones.
